When François took over in 1978, he immediately start doing thinhs his own way. Low yield and density, new grape growing technique, late harvest. All of his combine to give one of the most concentrated and fantastic wine of Sain-Emilion.
Grapes: Merlot 80% + Cabernet Franc 20%
Terroir: Terroir located on a slope on the edge of the limestone plateau with limestone and clay in one blocks. The vineyards of Tertre Roteboeuf are planted to 80% Merlot and 20% Cabernet Franc. The vines are 40 years of age, on average.
Grape Growing: Vines are trained closer to the ground using a cordon system. Low density, 5 555 vines per hectare. Sustainable grape growing.
Winemaking: The grapes are harvested by hand and are fermented in temperature-controlled concrete tanks. Aged 18 month in 100% french oak barrel especially made for them by Radoux according to the Mitjaville signature.
