It may seem strange to give a wine the name of a cow. It’s not so warped once you meet Laïs, a Jersey, in the Catalan country; she summarises this wine pretty well. A combination of freshness, depth and complexity.
Grapes: Maccabeu, Grenache Gris et Blanc
Terroir: Situated at about 300 metres altitude, the vines are positioned on an extremely rich 80% schist and 20% limestone clay marl.
Grape Growing: Organic and biodynamic grape growing with one simple rule: making wine the most natural possible with respect to the environment.
Winemaking: Hand-picked grapes and direct pressing maturation. Aged 50% in wooden vats and 50% in barrels for 10 months.
